Mesh Stencilling: RICH’S BUTTERCREAM ON RICH’S BUTTERCREAM

For this cake I have applied the Indigo mesh stencil and have used black buttercream (Rich’s brand) on white buttercream to achieve this effect.


I started by icing the cake and letting it chill in the freezer for 15-20 minutes. Then I attached the stencil using a few stick pins and slightly warmed up my black buttercream before applying it to the stencil.

I dyed the buttercream the colour I wanted the stain to be and slightly warmed it up in the microwave for 5 seconds. Stir the mixture really well and apply it over the mesh stencil using a small offset spatula. I used a bench scraper to scrape it off before slowly removing the stencil.


Carefully remove the stencil and place the cake back in the freezer for 10 minutes and repeat.


Some tips include making sure the cake is always chilled well. For black buttercream I always start with chocolate buttercream, so I do not have to add a ton of black food coloring. I spread the buttercream on the stencil using a small offset spatula and scrape it off using a bench scraper.
