For this cake I have applied the Spring mesh stencil and have used royal icing on white chocolate ganache to achieve this effect.
I started by mixing the royal icing with a small amount of water to get a spreadable consistency. I then tested the stencil out on a paper to ensure that the design would go through properly.
Always refrigerate the ganache for at least an hour so that it’s set nice and firmly before using the stencil.
